Oatmeal Pancakes

1 1/2 cup Rolled Oats

1 cup Cake Flour

1 1/2 tsp Baking Poweder

3/4 tsp Baking Soda

1/2 tsp Salt

1 Tbsp Sugar

2 cups Buttermilk

2 large Eggs

4 Tbsp Melted Butter (plus more for the skillet)

(Add ins - Blueberries, Chocolate Chips etc)

  1. In a medium bowl, stir together 1 1/2 cup Rolled Oats, 1 cup Cake Flour, 1 1/2 tsp Baking Powder, 3/4 tsp Baking Soda, 1/2 tsp Salt and 1 Tbsp Sugar

  2. In a separate large bowl, whisk together 2 cups Buttermilk, 2 Eggs, 4 Tbsp Melted Butter

  3. Add the dry ingredients into the wet ingredients and stir until just combined

  4. Let the batter rest for at least 5 minutes. This is a key - the batter will thicken.

  5. Cook on a griddle brushed with butter or coconut oil as you would normal pancakes.
